I love salads because of their diversity. I’m a firm believer that a salad isn’t what we all first think of, you know, a bit of lettuce with some tomato. It can be more diverse than that. Think of two of my favourite vegetables, sweet potato and pumpkin, roasted, a drizzle of oil with some herbs chopped through it, add some feta, some almonds and there you have it, a delicious salad. Remember salads are a meal too; you just have to look at them that way.
Matt Wilkinson is a Yorkshire born chef who has made a name for himself in Melbourne for creating big, bold salads. Formerly head chef at Circa the Prince, Matt is now co-owner and head chef at the ever-popular café Pope Joan and the neighbouring bar The Bishop of Ostia.
He is also co-owner of the boutique food institution Spudbar where healthy ‘slow food – fast’ is readily available. He has recently released his first cookbook Mr Wilkinson’s Favourite Vegetables sharing growing and recipe ideas with fellow vegetable lovers
Matt is a firm believer that growing, cooking and eating vegetables is not only healthy and flavoursome, but better for the planet than a diet heavy in meat.
