Ingredients

  • 4 slices of bread
  • 8 slices of cheese
  • 300 grams of kimchi
  • 1 mango
  • 1 avocado
  • 50 ml mayonnaise

Imagine the classic warmth and comfort of a cheese tosti, also known around the world as the revered croque monsieur, but with a twist, with the introduction of three extraordinary add-ons: mango, avocado, and kimchi.
It's a fusion of cultures and flavours, that proves just how thrilling a simple sandwich can be when you're willing to think outside the box.

You can either make your own kimchi or purchase ready-made kimchi at a Chinese supermarket, though many large supermarkets also stock kimchi these days. It's often available in the Asian section of the supermarket.

Preparation

  • Top each slice of bread with a slice of cheese. Then, place the bread in a frying pan that you've lightly greased on the bottom. Fry the bread on one side until it is browned and crispy. Then, turn the heat to low and cover the pan with a lid. Let it cook gently until the cheese has melted
  • In the meantime, drain the kimchi, but keep the juice.
  • Cut the mango into strips and do the same with the avocado.
  • Mix 2 teaspoons of the kimchi juice with the mayonnaise.
  • Remove the sandwiches from the pan and cut them in half widthwise. Then, top 4 of the pieces with the mango and avocado. Place the other halves on top with the cheese facing downwards. If desired, put them back in the pan for a bit to melt the cheese further.
  • Serve the kimchi toasted bread with the kimchi mayonnaise.
