An ideal tip for spring and summer, this quick iceberg salad is full of flavour and texture. You mix the salad with crispy cubes of tomato, cucumber, and shallot, and blend in grated salted Parmesan cheese. If you also mix the salad with a fresh dressing made with lemon juice and top it with crunchy nuts, you'll have all the flavours and textures on your plate in no time. We're fans!
Preparation
- Finely chop the shallots. Dice the tomatoes and cucumbers.
- Mix the ingredients for the dressing together. Season with pepper and, if needed, salt.
- In a large bowl, mix the shallots, tomatoes, and cucumbers with the iceberg lettuce. Stir in the grated Parmesan and the dressing.
- Serve the salad immediately and garnish on the plates with pine nuts or pistachios as desired.
