This delicious salad will taste best with good cocktail plum tomatoes, such as the variety we grow called Confetto. The salad can be fixed quickly and is perfect for a warm summer evening.

Preparation

Cut the tomatoes in half or quarters, the cucumber and the scallions into parts. Break the feta cheese into cubes and chop up the basil leaves. Mix the olive oil. Balsamic vinegar, basil and feta cheese in a bowl. Season with salt and pepper. Add the tomato, cucumber and scallion and mix everything thoroughly. Serve on a plate. Enjoy!
