  • 1 zucchini, cut into slices
  • cherry tomatoes
  • 2 garlic cloves, minced
  • 2 tsp oregano
  • 1 tsp salt
  • olive oil
  • 2 tbsp fresh lemon juice
  • 2 peppers/ capsicums

A vegetarian friendly recipe for the BBQ! Grilled halloumi with fresh vegetables on a skewer.

Preparation

Place the Halloumi and all of the veggies into a large bowl. Add the herbs, salt, olive oil and lemon juice and toss until the Halloumi and veggies are evenly coated with the seasoned oil.
Thread the cheese and vegetables onto skewers. And leave them in the fridge until you are ready to bbq. 
Grill the skewers for about 4-5 minutes on each side, until they start to color.

Tips from the author

Halloumi is a fresh, firm cheese, popular in Israel. The taste is slightly tangy and salty. Halloumi cheese is a perfect vegetarian option for grilling because it's firm enough to hold its shape as it cooks.
