Sweet peppers (also called capsicum) contains a lot of vitamins, especially when you can eat them fresh. This salad is very easy to prepare in about 20 minutes. You will have a colourful, healthy and tasty salad to enjoy.

Preparation

Cut the sweet peppers into slices. Squeeze them a little to take some water out. Fry red onion with oil. Sauce: mix 4 tablespoons of boiled water + 2 tablespoons of fish sauce + 2 teaspoons of sugar + 2 or 3 teaspoons of lemon juice + 1 teaspoon of garlic + hot pepper slices in a bowl. Sprinkle the sauce and 1 tablespoon of olive oil over the sweet pepper slices, and then mix together. Place on the dish, spread ground roasted peanuts and red onion over the top. Decorate with some coriander leaves. Enjoy!
