My daughter (ten years old at the time) and I once made this really good salad. She had been growing green peas in the garden as a project, and when harvest time came she had a really big job to pick the peas, and of course to shell them. She worked at it very seriously until at last she had a big bowl of fresh, soft green peas. She brought them to me and said "Dad, these are so nice that it seems a real pity to cook them. Can't we do something different?" And we did - I peeled a couple of fresh apples and diced them really small, to pea size, mixed it all together and sprinkled some lemon juice over it all with a couple of fresh mint leaves as a garnish. It was a very hot day so we had a meal of fruit and cold meats, with our fresh pea and apple salad. Really good and it's become a regular family favourite.

Preparation

Couldn't be simpler! Shell the peas, dice the apple, mix, sprinkle with lemon or lime juice and garnish. Ready to serve and enjoy.

Tips from the author

The lemon or lime juice not only add to the taste, it helps prevent the apple browning.
