This is an easy and delicious main meal salad to prepare and enjoy!
Preparation
- Wash the lemon, dry, then finely grate the skin to make the lemon zest
- Make a lemon marinade by combining the lemon juice, pepper, olive oil and lemon zest
- Wash and dry the chicken breasts, brush with the lemon marinade, cut into pieces and thread on the skewers. (Cover and refrigerate for 30 minutes to 1 hour)
- Rinse and drain the cabbage, carrot and cucumber and slice them all into thin strips and finely chop the shallot and parsley
- For the vinaigrette, put the vinegar with 2 tablespoons of water, a little salt, pepper and sugar and gently bring to the boil in a pan
- Add the grape seed oil and the hot vinaigrette to the cabbage, carrot, cucumber, parsley and shallot and toss through
- Let the salad stand for 30 minutes to allow the flavours to combine
- Cook the chicken: BBQ, grill or pan-fry chicken skewers until cooked through
- Serve salad seasoned with salt and freshly ground pepper and topped with the chicken. Garnish with fresh parsley
