A fast meal of scrambled eggs with tomato seasoned soy sauce. Perfect for breakfast or lunch. Healthy and nutritious and easy to make.
Preparation
Crack the eggs into a measuring jug. Add a pinch of salt and milk, then use a fork to beat them together well
In a skillet over medium heat, scramble eggs until almost done. Remove to a plate
Return skillet to medium heat, and stir in garlic, cook for 1 minute stir in tomatoes, 3 tbsp of water and tomato ketchup. Cook 2 to 3 minutes. Return eggs to skillet; cook, stirring, about 1 minute more.
Serve the scrambled eggs with a little soy sauce and garnish with spring onion rings.
Tips from the author
Eggs will continue to cook even after you’ve taken them off the heat, to eat them just the right way it's important to remove them just before they are ready.
