  • 1 clove of garlic
  • 1 tsp of crushed cashew nuts or peanuts

This Asian dressing goes so well with a variety of salad ingredients. It brings an Asian twist to every dish.

Preparation

Peel the outer leaves of the lemongrass and cut the bulb into tiny bits.
Combine the lemongrass pulp with the juice of the lime, fish sauce and brown sugar. 
Cut seeded pepper lengthwise to desired thinness or cut into small cubes.
Add the peppers to the dressing.
Add some crushed cashewnuts or peanuts before serving. 

Tips from the author

Instead of cashew nuts add crushed peanuts. Do you prefer it less hot? Leave out the peppers and bring in a little fresh ginger.
