Ingredients

  • 300 grams bulgur
  • 1 red onion
  • 100 ml white wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 eggplants
  • 2 cucumbers
  • 5 tomatoes
  • 100 grams pistachios
  • Hummus to taste
  • Fresh coriander or flat-leaf parsley to taste
  • Oil for frying
  • Pepper and salt

This bulgur bowl with fried eggplant, tomato, cucumber, and sweet and sour onion will be your new favorite lunch. You can easily prepare all the ingredients beforehand and take them with you. The easiest way is to store the different components separately and combine them at lunchtime. All you need to do during lunch is mix the fried eggplant, bulgur, sweet and sour onion, other vegetables, pistachios, and hummus, and you'll have a delicious and nutritious lunch in no time!

Preparation

  • Prepare the bulgur according to the instructions on the package.
  • Slice the red onion into rings and place them in a saucepan with the vinegar, sugar, and salt. Bring to a boil, then reduce the heat. Cover the pan and let it simmer for about 10 minutes.
  • Remove the stem and end of the eggplants and cut the flesh into small cubes. Heat two frying pans over medium heat with some oil. Fry the eggplant cubes for about 15 minutes until golden, tender, and crispy. Season with pepper and salt.
  • Slice the cucumbers and dice the tomatoes. If you want to keep the tomatoes extra fresh, remove the seeds before dicing.
  • Roughly chop the pistachios.
  • Divide the bulgur, fried eggplant, remaining vegetables, and sweet and sour onion among the plates. Top with hummus and fresh herbs to taste. Want to make the bowl extra flavorful? Drizzle some of the sweet and sour onion liquid over it.
