Lovely as a light lunch or as a side dish with your main meal! This salad can easily be adapted to your own taste using a different kind of cheese or adding pine nuts or roasted pumpkin seeds.
Preparation
- Separate the individual lettuce leaves, rinse, dry then tear the large leaves into smaller pieces.
- Place the lettuce leaves, red onion, cucumber, chives and parsley in a bowl.
- Crumble the goat’s cheese over the salad.
- Mix the salad with a vinaigrette dressing or a dressing made with garden herbs.
