This is the message I received from a friend from South Africa..after reading it, I decided to make him a special Southern Hemisphere Christmas Salad!!

"Growing up in the Southern Hemisphere with a Eurocentric or English background is a bit strange - all your cultural images of Christmas involve snow, snowmen, reindeers, sleighs and hot turkey meals, all the Christmas cards and wrapping paper for gifts show the same thing. But outside it is blue skies and boiling hot, and the worst thing in the world is to sit in a room at more than 30 degrees with a lot of people and eat hot turkey, roast potatoes and heavy vegetables and starch because the "tradition" demands it. Ugh! Even worse to spend the morning cooking the stuff in that heat! For sure it calls for salads!"  Marcus from South Africa

Preparation

Just cut all ingredients and put them all together on a plate and season with oil vinegar, salt and pepper. Easy and fresh! Engjoy the BBQ, the friends, the thongs, shorts and hat. (And a swim if you are lucky enough to be near the beach!)
