This salad makes the perfect packed lunch for school or work. Shredded cabbage, holds up well after being tossed with dressing and it even tastes better as it marinates!
Preparation
- In a large bowl toss together the chopped cabbage, apple, parsley and combine with lemon juice, salt and pepper to taste
- In a small bowl whisk together the dressing of mustard, yoghurt, and honey
- Mix together and place in a lunch box or salad container with a tight lid
- Keep the pecans separate and Just before serving, add them to the salad to keep them crunchy
