This is one of those appetizers that everyone thinks was made by a professional but was actually something you whipped up in a jiffy. The briny flavour of the salmon combines beautifully with the fresh cucumber. Use mini cucumbers for this dish. They look just as chic as normal sized cucumber but there is less work involved!
Preparation
- Put the smoked salmon, mascarpone, lemon juice, and dill in the blender. Mix to a light mousse. Season to taste with salt and pepper.
- Cut the mini cucumbers and in half lengthwise.
- Put the salmon mousse in a piping bag and gently pipe onto the mini cucumber.
- Garnish with the caviar and dill.
