  • 100 grams Parmesan cheese, grated
  • Chili flakes to taste

Preparation

  • Cook the pasta according to the instructions on the package.
  • Slice the mushrooms and finely chop the onion. Mince or press the garlic cloves.
  • Heat oil in a large frying pan or skillet and sauté the onion and garlic until the onion turns translucent. Then, add the mushrooms and cook until browned. Season with salt and pepper.
  • Add the broth and the spinach, a handful at a time, letting the spinach wilt and most of the liquid evaporate over low heat. Stir in the cream, lemon zest and juice, mustard, and half of the Parmesan cheese. Mix in the cooked pasta.
  • Divide the pasta onto plates and garnish with the remaining Parmesan cheese and chili flakes to taste.
