A seductive combination of strawberries, baby spinach leaves and pistachio. This salad will add a touch of romance to your next meal, or can be served as an appetiser with a glass of wine on the side.

Preparation

  • Start with a bed of baby spinach leaves in a bowl and top with the chopped strawberries
  • Using a mortar and pestle, roughly grind the pistachio nuts and sprinkle on top of the salad
  • For the dressing, whisk together olive oil, balsamic vinegar and a pinch of salt. Drizzle over the salad (for a sweeter dressing, add half a teaspoon of brown sugar or honey)
