When I was living in Holland I was introduced to a strange salad with a vegetable called witlof served with apple and walnuts. I have to admit I wasn't a huge fan of this bitter tasting vegie at first. But I soon grew to love its unique flavour.

Witlof has a really interesting and different taste. It reminds me a little of the asian greens that you often get in salads at restaurants. Witlof is also known as the 'Belgian endive', which reflects its strong taste. I make this witlof salad on special occasions and love the fresh, crunchy, slightly bitter taste. All the family like this salad, especially my son who refuses to eat cooked vegetables. So give witlof A try, it's good for you and you'll be surprised how much it grows on you.

Preparation

Core witlof and wash. Cut witlof into narrow sections, chop walnuts into small pieces. Cut apples into small squares and mix all in a bowl and stir through one tablespoon of mayonnaise.
