Should you have guests over for diner and you have some time to prepare something amazing, these vegetable wraps are ideal. Not only do they catch the eye with their cheerful colours, they are also heartily delicious.

Preparation

Oven

  • Heat the oven on high grill setting first. Place whole Sweet Palermos on a baking tray. Grill these on a very high setting. When the Sweet Palermos have turned dark from grilling, turn them over. Grill this side until they have become dark as well. Then put them in a bag and let them rest for a while. Then you can easily peel off the skins.
  • Cut the feta into pieces, chop the garlic and the deseeded red pepper. Put all this together in a food processor, season with some pepper, salt and oil and then finely blend the mix.

Topping

  • Slice 1 red onion thinly and put it in water for at least half an hour. 
  • Boil 1 bunch of green asparagus tips and rinse them with cold water, so they will stay crispy.
  • Do the same with the soya beans.
  • Put the black sesame seeds in a bowl.
  • Meanwhile, slice the chocolate brown Sweet Palermo into thin rings, the snack tomatoes in half and pick basil leaves off the sprigs.
  • Cut cucumber into half slices and trim cress.
  • Cut the orange Sweet Palermo into very small cubes.

Spread

  • In a frying pan, grill or fry the tortilla wraps briefly until lightly browned.
  • Spread all tortillas with the Sweet Palermo spread. Top each of 3 tortillas with the same topping.

Prepare the wraps

  • Top the first 3 tortillas with the green asparagus tips and, as a garnish, the red onions.
  • Top another 3 tortillas with soybeans, rings of Sweet Palermo and finish with some black sesame seeds.
  • Top the next 3 tortillas with the halved snack tomatoes and basil leaves, salt and pepper
  • Top the last series of tortillas with cucumber, orange Sweet Palermo cubes and as a garnish the cress.
