If I had to eat only one food for the rest of my life, it would be salad. Salads are so versatile...add a bit of protein and it becomes your main meal. I love roasting root vegetables and adding it to my fresh greens for variety and flavour. Living in California, I am so blessed to have fresh vegetables all year round. I’m still discovering new vegetables all the time!
I love grilled veggies! This is our family’s favourite way to eat vegetables and to have my husband cook for me! So many different choices...eggplants, sweet peppers, onions, sweet potatoes, carrots, zucchinis, asparagus, (a bit tricky to keep on the grill...but yummy!) and one of my favourite is green onions! The list is endless...
A drizzle of balsamic vinegar and olive oil....yum! The grilling brings out the natural flavours of the veggies and it is sooo good! When the weather is cooler, I broil it right in the oven.
