Winter-proof your salad
Do you enjoy rugging up in winter but miss the crunch and creativity of summer salads? Fear not, we have a few simple tricks to turn any salad into a winning winter warmer.
Choose seasonal vegetables
By moving with the seasons you can enjoy the right salad all year around. Broccoli and cauliflower, carrots and sweet potato make a great wholesome salad. Or if you’re feeling adventurous, experiment with beetroot and eggplant. Splash some olive oil on these ingredients and they’ll keep in the fridge for a few days.
Warm meat and fresh veggies
Take almost any salad and throw in a hot chicken fillet or beef strips and you have a light and healthy meal with a warm filling.
Look for other leafy greens
In winter you may want leafy vegetables that offer a bit more versatility. Replace your iceberg lettuce with something a bit firmer such as endive, and baby spinach and rocket leaves.
Add a hearty filling
Keep your body warm and energy levels high by adding a grain to your salad. There’s so many options widely available such as quinoa, brown rice, polenta and amaranth.
Spicy dressings
Warm up from the inside out and increase blood flow by customising your salad dressing to winter. Heat up with spices such as cinnamon, ginger, chilli pepper and cumin.
