A beautiful salad that includes two delicious superfoods: spinach and beets.
Preparation
Put the baby spinach laeves into a salad-bowl.
Peel the beets and carrots and cut them into slices or sticks, as you prefer. I like to slice the beets and quarter the carrot sticks.
Cut the peppers and mushrooms into slices (not too thin).
Add the beets, carrots, peppers and mushrooms to the bowl.
Mix all ingredients for the dressing (except the sesame seeds) and drizzle over the salad.
Finally sprinkle the toasted sesame seeds over the salad.
