A fun and tasty Easter inspired salad. Radish, cucumber and dill is a perfect spring salad combination: crunchy, colourful and bursting with freshness.
Preparation
Tear apart the lettuce leaves and arrange them nicely on a plate. Slice the eggs and tomatoes into wedges and add to the salad. Top with the sliced radish and cucumber. Mix together dressing ingredients and drizzle over the salad. Season with salt and pepper.
Tips from the author
If you find the taste of radish a little too sharp, add a squeeze of lemon juice to soften the sharpness. If you don't have access to fresh dill, some fresh oregano works just as well. Or simply substitute 3 teaspoons of fresh herbs with 1 teaspoon of dried herbs.
