An original salad that uses thin "liguine" strips of zucchini (instead of pasta) to surprise someone you love!
Preparation
- Peel and finely slice the zucchini with a potato peeler, then cut the slices into thin "linguine" strips 5mm wide with a knife.
- Cut the tomatoes into thick slices and then into cubes.
- Finely chop the basil.
- In a bowl gently combine all ingredients with the zucchini linguine and toss with the olive oil, salt and pepper.
- Serve forming a 'nest' with a fork and garnish with sprigs of basil.
