Meet Kim Martin from Frais Farms in Linennow in Eastern Victoria. Mâche (prounounced marhsh) is a new and exciting fresh salad ingredient for Australians to enjoy. Kim is pleased to share some of their salad recipes.
Mâche Rosettes have a mild, sweet, nutty flavour and a succulent texture. With its superb flavour and tender texture, Mâche lends itself to a much wider range of dishes than ordinary greens.
Nutritionally it is rich in vitamins A & C and minerals such as iron and folic acid. It is high in fibre and lutein (a powerful antioxidant) and low in calories.
Mâche Rosettes are a salad green with a long history. Originating in France where it’s known as the “little sweet one”, it’s also called Lambs Lettuce or Corn Salad. As far as appearance, Mâche is a beautiful, delicate rosette with a vibrant green colour that looks great on the plate.
